One-pot Lamb shoulder roast

Our first Share and Pair Sundays of Oregon Wine Month! We love a good crockpot, one-pot, dish in our household with two kids and lots of adventures to be had. We made this dish with lamb and root vegetables while staying at a cabin in Central Oregon recently. After a day out skiing, biking, hiking, and floating on the river you come back to dinner ready to eat with no screaming hungry little tummies. Just pop a bottle of wine for Mom and Dad to share and everyone can dig into dinner.

For the one-pot meal (grill and crockpot required)

Lamb shoulder roast, pasture-raised
Root vegetables to fill the floor of the crockpot: carrots, parsnips, potatoes, sweet potatoes, etc (quartered and halved depending on size)
Onion (chopped)
5 garlic cloves (whole)
Salt and pepper to taste

Heavily season the lamb shoulder with salt and pepper as this is a large piece of meat. Heat a grill on medium-high heat and sear off the shoulder roast on all sides to get a nice crust and dark brown color on all sides. Layer the chopped root vegetables, onion and garlic cloves across the bottom of the crockpot and season with salt and pepper (no oil!). Lay the lamb shoulder on topped of the bed of vegetables and hope that the lid still closes on top. Set to low heat and enjoy the adventures of the day knowing dinner is ready to be served when you get back paired with a bottle of Finite Cellars RPG Pinot Noir. The roast is tender, delicate and easily flakes apart such that even the most discerning young palates might even ask for seconds. Mash the root vegetables all together for an additional flavor experience. Enjoy!
